Step-by-Step Oxtail Phở Recipe

Ingredients

For the Broth:

  • Oxtail bones
  • Beef bones (preferably marrow bones)
  • Chicken bones (lightly grilled)
  • Large onions (lightly grilled)
  • Ginger (halved and lightly grilled)
  • Fresh lemongrass stalks (smashed)
  • Water (enough to cover the bones)
  • Salt, fish sauce, and rock sugar to taste
  • Daikon white radish

For the Flavour Base:

  • Homemade saté chili sauce
  • Fresh herbs (Thai basil, green onion, cilantro)
  • Bean sprouts
  • Lime wedges
  • Sliced jalapeños or Thai chillies (optional)
  • Rice noodles (bánh phở)
  • Thinly sliced beef (optional)

Instructions

  1. Prepare the Bones:
    Rinse all bones under cold water. Optionally, blanch them in boiling water for 5–10 minutes, then drain and rinse for a clearer broth.
  2. Grill the Aromatics:
    Char the halved onions and ginger until slightly blackened for a smoky, deep flavour.
  3. Simmer the Broth:
    In a large pot, combine bones, grilled aromatics, and lemongrass. Cover with water and boil, then simmer gently for 24 hours. Skim off foam as needed.
  4. Season the Broth:
    Strain the broth into another pot. Add white radish daikon, salt, fish sauce, and rock sugar to taste. Stir in saté chilli sauce for depth.
  5. Prepare the Noodles:
    Cook rice noodles per package instructions, drain, and set aside.
  6. Assemble the Bowls:
    Add noodles to each bowl. Ladle in hot broth and top with herbs, sprouts, lime, and chillies. Add sliced beef if desired.
  7. Serve:
    Serve hot. Let diners customize with more herbs, lime, or chilli sauce.
